I love stew! It’s important to cackle like a witch as you add ingredients to your stew pot.
Easy and cheap veggie stew:
Chop:
- peeled russet potatoes
- Yellow onion
- Celery
- Carrot (frozen is fine too)
Add:
- bay leaves
- black pepper
- Cayenne pepper if your a bit sick and need to clear you sinuses (it’s potent though, add slowly to taste, it’s fine to add directly to you bowl instead)
- Dry basil
- a bit of turmeric if you like it and have it on hand
- salt
- If you can afford it veggie broth or some ‘better than bouillon’ seasoning is nice but if not, add more onion and spices.
The proportions depend on your batch size and preferences and can be pretty flexible but for a medium pot or a spaghetti pot that’s about 1/3 full I usually use 2-3 medium russet potatoes, 1-2 yellow onions, 3-4 celery stalks, a handful of carrots (2-3 fresh ones), 2+ bay leaves. Everything else to taste. Add salt last after you’ve added vegetable broth or water to ~2 in above the soup contents and brought to a boil. Simmer for about 20 min.
No tomato paste? I usually ad about 1 - 2 tbsp to any stew.
