    It looks like fried shallot, which is much more southeast Asian.

    My question would be why do the sesame seeds have some kind of Xmas herpes?

    Every sushi place I’ve been to has served some rolls with dried onion flakes. Never on the side like this, but it’s definitely common to have them.
