Antisemitism is per definition prejudice against Jews, and not semitic people.
Not all Zionists are Jews, not all Jews are Zionists. One is a political position (Zionism), the other is an ethnicity (Jewish).

It’ could be reasoned it’s not accurate to call Israel’s actions “antisemitic” as that has been chosen as meaning only Jewish related hatred.
It can also be reasoned that it’s perfect valid to call Israel’s actions “anti Semitic” as this is a genocide against an Arabic speaking Semitic population.

Language doesn’t always follow logical rules though, it’s defined by how we actually use it. Like everyone understands that the word “homophobia” means prejudice against homosexual people, despite the “homo” part only meaning “same” when it is without the “-sexual” part. Nobody thinks it means fear of things that are the same
That has literally always been the definition. This is like saying that an antibiotic is something that kills every living thing. Antisemitism and Semitic are just two different words, and have different meanings. This is how language works.
The dictionary is descriptive, not prescriptive. It describes the most common usages of the term and language changes and evolves with time. it can and does miss out other definitions which are less commonly used but still applicable. Also, Palestinian people and Jewish people closely share genetic ancestry
